Saute finely chopped onions and garlic until transparent.

Finely chop cilantro. Remove the stem +seeds of Jalapeno, chop and roast the peppers.

Chop sushi tuna into 1"squares. Add tuna, jalapeno peppers, chopped cilantro and 1 tbsp of olive oil into food processor for 1 min.

Add sauteed chopped onions, garlic and olive oil residue into Tuna mixture along with salt, pepper, and mixture in food processor for 30 secs.

Form into 3/4" patties; grille or pan sear on high heat. Should be med/rare for best favor.

Garnish with alfalfa sprouts, slice of tomatoe and red onion, and wasabi dressing. Serve on poppy or sesame seed bun.
