Peel the shallot and chop it very finely.

Wash the cilantro and chop it finely.

Cut a piece of cheese and dice it.

Slice a piece of smoked pork shoulder into strips.

Wash the grapes and cherry tomatoes.

Peel a couple of kiwis and slice them into rounds.

In a bowl, beat a couple of eggs, add 1 teaspoon of flour (about 3 grams), half a packet of baking powder (about 1 teaspoon or 4 grams), the chopped cilantro, shallot, a pinch of food coloring, and the shrimp. Mix well and let it rest in the refrigerator for a while.

Heat a little olive oil in a skillet and pour in the shrimp omelet mixture. Cook to your liking.

You can also make the omelet in small portions.

On a platter, arrange the salad mix and top with all the prepared ingredients and the shrimp omelet cut into pieces, so each person can serve themselves as much as they like.

Dress the salad with any sauce or vinaigrette you like.
