Ingredients

4 servings

1/4 cupmayo
1/4 cupchopped onion
1beaten egg
1 tspsugar
1/4 tspsalt
1 pinchof pepper
1 lbsquash, cooked, drained and mashed
1/4 cupshredded cheese
1/2 cupcracker crumbs, divided

Steps

Cook,drain and mash squash

Combine mayo,onion , 1/4 cupcracker crumbs,egg, sugar,salt and pepper

Add squash and mix well

Place mixture in greased 1 quart casserole and bake, uncovered @ 350° for 25_30 minutes

Sprinkle cheese on top and bake 5 minutes more

Recipe can be doubled, but add more salt and sugar
