STEP 1: CHOP bacon, discard rind. heat oil in medium pan. add bacon & stir for 3 mins, until lightly golden. drain on paper towel.

STEP 2: ADD leek to pan, stir over medium heat for 5-10mins until soft. add potato & stock, bring to boil. reduce heat to low;over. simmer,stirring occasionally,for 20mins or unyill potator is tender.

STEP 3: REMOVE pan from heat.allow mixture to cool. slightly. Tranfer mixture,in batches,to blender process until smooth.

STEP 4: RETURN mixture to pan, add bacon,salt & pepper. heat through & serve.

STEP 5: GARNISH with spring onion/fresh herbs,if Desired.
