Ingredients

  1. 2 tbspChile Powder
  2. 2 tspDried Oregano
  3. 1 1/2 tspPaprika
  4. 1 tspground Cumin
  5. 1/2 tspSalt
  6. 1 1/2 lbcubed Pork Meat
  7. 1 tbspOlive Oil
  8. 2 cupchopped Onion
  9. 1 1/2 cupgreen Bell Pepper diced
  10. 1 tbspminced Garlic
  11. 2 1/2 cupChicken broth
  12. 1 can28 oz Hominy drained
  13. 1 can14.5 oz diced tomatoes undrained

Steps

  1. 1

    Combine first 5 ingredients in a large bowl, set mixture aside. Add pork meat to remaining mixture, toss well and coat.

  2. 2

    Heat 2 teaspoons of oil in a large pan over medium-high heat. Add pork mixture to pan. cook 5 minutes or until browned, stir occasionally. Remove pork from pan, set aside. Add remaining oil to pan. Add onion, bell pepper, and garlic saute 5 minutes or until tender, stirring occasionally. Return pork to pan. Add remaining spice mix, broth, hominy, and tomatoes, bring to a boil. Partially cover, reduce heat, and simmer 25 minutes.
