Ingredients

  • 4boiled potatoes cut in big cubes
  • 2chopped onion
  • 1 tbspginger and garlic paste
  • 4 tbspcooking oil
  • 1chopped tomato
  • 1 tspsalt
  • 1/4th tsp sugar
  • 1bay leaf
  • 1 tspturmeric powder
  • 1 tspred chilli powder
  • 1 tspcumin powder
  • 1 tspcoriander powder
  • 1 tspgaram masala powder
  • 1/2 tspKasuri methi
  • 2 tbspchopped coriander leaves
  • 2slit green chilli
  • 1/2 cupwarm water

Steps

  1. 1

    Heat oil in a kadhai/pan. Add 1/4th tsp sugar. Wait till sugar colour changes.

  2. 2

    Add bay leaf and chopped onion. Saute the onion until slightly golden brown. Add turmeric and red chilli powder. Saute for some seconds or so.

  3. 3

    Add ginger and garlic paste. Saute for 1-2 min. Next, add chopped tomato and salt.

  4. 4

    Saute in medium to low flame till oil separates.

  5. 5

    Add cumin powder, coriander powder, 1/2 teaspoon garam masala powder, Kasuri methi and slitted green chilli. Saute for another 1 minute.

  6. 6

    Add boiled potato cubes and saute for 2 minutes in medium flame.

  7. 7

    At this point add 1/2 cup of warm water. Cover the lid and cook on low flame for 10 minutes Check in between.

  8. 8

    Lastly, add chopped coriander leaves and rest garam masala powder. Mix well and serve hot.
