Ingredients

4 servings
  1. Mixed vegetables chopped fine:
  2. 2small carrots
  3. as neededBeans
  4. 1/2Capsicum
  5. 1/4cabbage
  6. 1Onion
  7. 1-2Green chillies
  8. 12flakes Garlic chopped fine
  9. 1 inchGinger chopped fine
  10. 2 tbspsCornflour heaped
  11. 5 cupsWater
  12. Sauces:
  13. 2 tbspsGreen chillies sauce
  14. 2 tbspsTomato sauce
  15. 2 tspSoya sauce
  16. 1 tspVinegar
  17. to tasteSalt
  18. 4 tbspsCoriander
  19. 1/2 tspSugar
  20. as neededOil to temper
  21. Garnish:
  22. 200 gmsHakka noodles
  23. as neededWater for boiling
  24. as neededOil for deep frying

Steps

  1. 1

    Add 2 tbsps oil to a deep sauce pan.

  2. 2

    Add chopped ginger and garlic. Saute for a minute. Add chopped green chilies and onion. Saute further.

  3. 3

    Now add the chopped vegetables in order, beans, carrot, capsicum, cabbage. Saute in between.

  4. 4

    Add the Sauces and vinegar. Stir fry

  5. 5

    Add required water. Add salt and let it boil till vegetables are little tender.

  6. 6

    Dissolve cornflour in 1/2 cup water and add to the boiling soup mixture.

  7. 7

    Simmer for few minutes. Add sugar and mix. Add coriander.

  8. 8

    For the garnish: Boil sufficient water to cook the Hakka noodles. Add Hakka noodles while water is boiling. Leave for 3 minutes and strain.

  9. 9

    Keep oil for deep frying. Fry the boiled and strained noodles in small batches. Drain on a kitchen towel.

  10. 10

    Pour soup in cups and garnish with crisp noodles.
