Steps

wash clean and dry the okras. slit them length wise. do not remove the heads.

saute them in a pan for a couple of minutes, in 1 tbsp oil......(any vegetable oil is preffered.....whichever you normally use......haven't tried in olive oil though)

grate the tomatoes, garlic, onion. pour the remaining amount of oil (and more if necessary) in a wok and cook the grated ingredients along with the powdered masalas. for a couple of minutes (to cook the flavors through)

add two cups of water and cook the gravy for a couple of minutes more then add the okras and let it cook under a lid for a maximum ten......n minimum 6-7 minutes

keep stirring as it cooks.......not constantly but gradually so the masala doesn't stick to the bottom of the pan

so......that's done.....we usually have it with rice and daal( lentil curry)
