
Marinated Balsamico Aubergines

Preheat oven to 200 Degrees C.Cut the aubergines in cubes (unpeeled). In bowl mix well with salt, Pepper and 2 TL Olive oil. Place on a baking sheet lined with baking paper and bake in the oven for about 20 or more minutes. Depends how big your cubes are.

Meanwhile prepare the sauce. Cut onions in tiny cubes and mix together with mustard, honey, Balsamico 4 TL Olive oil and water. Mix well.

Remove aubergines from oven and mix directly with sauce and let them marinate. You can serve them hot or cooled down.

Arrange on plate and garnish with cherry tomatoes and Feta.
