Ingredients

3 servings
  1. 2 tbspcooking oil
  2. 1onion, sliced
  3. 3 clovesgarlic, minced
  4. 1lemongrass, bruised
  5. 1.5 tbspcurry powder
  6. 1 cupbeef stock (or other types of stocks) / water
  7. 3star anise
  8. 1cinnamon stick
  9. 1.5 tbspsugar
  10. 1 tbspground bean sauce (optional)
  11. 2 tbsptomato paste
  12. 1 cubebeef or chicken seasoning or powder
  13. 3carrots
  14. 1spring onions, chopped
  15. Beef or chicken cubed
  16. To tastesalt and pepper

Cooking Instructions

  1. 1

    Heat cooking oil and saute onion, garlic and lemongrass, approximately 1 - 2 minutes

    Add beef/chicken, stirring

  3. 3

    Add curry powder, toss or stir

  4. 4

    Add stock/water, star anise, cinnamon stick, sugar, ground bean sauce (if using), tomato paste, seasoning powder/cube, salt and pepper. Bring to boil

  5. 5

    Add carrots, boil for 30 mins on low heat

  6. 6

    Serve and garnish with spring onions
