Ingredients

  • Potatoes and sauce
  • 6Potatoes
  • 1/2 cupButter (melted)
  • 1 canRoasted red bell peppers or pimentos
  • 2/3 cupSour cream
  • 1salt and pepper (to taste)
  • 1Chili powder (to taste)
  • 1/2 cloveGarlic

Steps

  1. 1

    Preheat oven to 400°F

  2. 2

    Clean potatoes and boil until softened but still solid (approx. 8-11 minutes)

  3. 3

    Extract potatoes and place in pan of Goldwater for easy handling

  4. 4

    slice potatoes into halves and baste with olive oil and sprinkle with salt and pepper

  5. 5

    bake potatoes face down for 8-10 minutes until brown with crisp skin

  6. 6

    mix sour cream butter chili powder salt pepper garlic and red peppers in a blender until liquefied

  7. 7

    Carefully scoop potato outgoing a spoon and set the insides in a bowl.

  8. 8

    Place skins back in theorem for 2-4 minutes to crisp

  9. 9

    mix liquid ingredients with potato meat

  10. 10

    Pour mixture back into potato skins and bake for 2-4 minutes until brown on top

  11. 11

    Topwith chives or whatever
