Ingredients

  1. 4 largezucchini sliced lengthwise
  2. 8 ozfancy shredded mozzarella
  3. 1 candelmonte basil garlic oregano diced tomatos
  4. 3 largewhite mushrooms diced
  5. 1/4 cupchopped baby spinach
  6. 1fresh ground cracked pepper
  7. 1basil
  8. 1oregano
  9. 1garlic pepper
  10. 1extra virgin olive oil
  11. 1grated parmesan cheese

Cooking Instructions

    slice lengthwise and scoop out insides of zucchini (a melon baller works great) and set on foil lined baking sheet.

    dice some of the zucchini that was scooped out and mix with diced mushroom and spinach

  3. 3

    spoon into zucchini loosely.

  4. 4

    add tomatoes on tops and then cover tops with as much mozzarella as you can, then sprinkle on parmesan cheese.

    drizzle tops with olive oil and season with pepper, oregano, garlic pepper, and basil.

    bake for 15 minutes at 400° or until cheese is melted and starting to brown.
