This is a Thai style clear soup which has all the flavours - spicy, sweet and sour. It is actually a street food, which is simply yummy and mouth watering. The prawns and mushroom brings out the authentic oriental flavour. Prawns can be substituted with boiled & shredded chicken.

You can also add some noodles to make a complete meal. A bowl of this appetizing soup gives a soul satisfying experience. It is almost like a South Indian rasam.

Ingredients

  1. 1/2 litrechicken stock
  2. 5-6kaffir lime leaves
  3. 2 stalkslemongrass (only the white part to be used)
  4. 1 inch galangal (Thai ginger), sliced
  5. 2green chilies
  6. 1 tsp.tomato paste
  7. 1 tbsp, tomato sauce
  8. 1/2 cupmushroom, sliced
  9. 1 tsp.red chilli powder
  10. 1/2 cupprawns / shrimps, cleaned & deveined
  11. to tastesalt
  12. 1/2 juice of 1/2 lime
  13. 1 tsp.coriander leaves to garnish

Steps

  1. 1

    Bring the stock to a boil. Then add the kaffir lime leaves, galangal and lemongrass. Simmer on a low flame for 7-8 minutes.

    Add rest of the ingredients (except lime juice & coriander leaves). Simmer further for 3-5 minutes.

    Drizzle lime juice. Garnish with coriander leaves & serve as a light meal.
