fry onions then garlic

prepare vegetables and toss them in a pot with the sauce. throw onions in once fried.

cook everything on mediumish. add water if it starts getting burny.

close lid and let it cook for as long as possible (3 hours or so).

while cooking, fry tofu. throw it in the pot once done.
