
Coffee and Walnut Cupcakes

Pre heat oven to gas mark 4/ 180°F

Mix the butter (4oz) and the sugar, use a wooden spoon and mix with love

Then mix in the eggs, stir the mix until you have no lumps (you'll need a strong arm)

Add the flour, with the baking powder (make sure it's sifted), instead of using a wooden spoon use a metal spoon and fold the mixture, this way you get lots of air into the mixture so it's nice and light

Add your walnuts, a good idea is to buy pre-ground

Then add your coffee 2 teaspoons, mixed with a 20mls of boiling water

Mix it up nicely, don't forget to lick the spoon, and put into your cupcake cases, fill about 2/3rds full

Cook for 20-25 minutes, to test they are done press lightly on top of the cake if it bounces back they're done. Leave to cool for 10mins

Now for the frosting, you'll need an electric whisk , so mix the butter (4 1/2oz)and the cream cheese, also add the same amount of coffee and water you used for the cake mix

Then gradually sift the icing sugar, continue to whisk until mixture is thick, if it doesn't look thick enough add more icing sugar

Then spoon into your piping bag, leave in fridge for 10mins

Once cool, you can pipe the mixture onto the cupcakes

Add whole walnut peices or other decorations to look pretty

Now the most important step, eat up and enjoy.
