Ingredients

1 hour 30 mins
6 servings
  1. 2 tbspolive oil
  2. 1 1/2 cupdiced bell peppers (any color will do)
  3. 1 1/2 cupdiced onions (I use white onion)
  4. 1 1/2 cupdiced celery
  5. 1 packagestofurky sausages
  6. 2 cupimagine organic no chicken stock (or veggie stock)
  7. 2 clovegarlic
  8. 1 tbspparsley
  9. 1 tbspbasil
  10. 2 cuprice
  11. 1 cantomato sauce
  12. 1 candiced tomatoes (optional)
  13. 1creole seasoning (tommy chacheres)
  14. 1salt
  15. 1pepper

Steps

  1. 1

    Dice all vegetables and the package of tofurky sausages.

  2. 2

    Once thats done, drop the olive oil into a decent sized pot and put it over medium heat.

  3. 3

    Once oil is hot, add onions, bell peppers, celery, garlic and sausages and saute for about 10 to 15 minutes.

  4. 4

    Next add the basil and parsley to the mix followed by the tomato sauce, diced tomatoes and stock.

  5. 5

    Next drop the rice in. If using brown rice you may need to cook a bit longer/add more water over time.

  6. 6

    cook uncovered and stir occasionally until the rice is tender usually about a half hour or so.

  7. 7

    Once rice is tender add salt, pepper and creole seasoning to taste. If you like iy a bit on the hotter side you can dice scotch bonnet peppers into the mixture or add a squirt of your favorite hot sauce.

    Garnish with parsley
