Preheat oven to 400°F

Place pastry on baking sheet. Bake for 10-13 minutes. Place a baking sheet on top. Bake for another 10-13 minutes. Let cool.

Boil a pot of salted water. Add peas and cook until tender. Rinse peas.

Set 1/3 cup of peas to the side. Blend the rest of the peas, ricotta, and 1 tbsp of chopped mint together. Stir the lemon zest and desired seasoning into paste.

Mix the remaining parsley, mint, green onions, and peas. Season this as desired.

Spread paste on the pastry, top with mixture. Garnish and season as desired.
