Ingredients

  • 18" x 10" rectangle of uncooked puff pastry
  • 1 1/3 cupEnglish Peas, shelled
  • 1 cupRicotta cheese, drained
  • 3 tbspMint, chopped
  • 1 tspLemon zest
  • 1/4 cupParsley Leaves (flat-leaf)
  • 2Green onions, trimmed and thinly sliced
  • 1Lemon Juice (to season)
  • 1Pea shoots (to garnish)

    Preheat oven to 400°F

  2. 2

    Place pastry on baking sheet. Bake for 10-13 minutes. Place a baking sheet on top. Bake for another 10-13 minutes. Let cool.

  3. 3

    Boil a pot of salted water. Add peas and cook until tender. Rinse peas.

  4. 4

    Set 1/3 cup of peas to the side. Blend the rest of the peas, ricotta, and 1 tbsp of chopped mint together. Stir the lemon zest and desired seasoning into paste.

  5. 5

    Mix the remaining parsley, mint, green onions, and peas. Season this as desired.

  6. 6

    Spread paste on the pastry, top with mixture. Garnish and season as desired.
