mix salt and clove together,set aside

clean chicken, remove as much fat as possible, leaving the skin intact and rinse thoroughly. do not dry.

place chicken in a large bowl, rub with dry mixture inside and out .make sure to rub under skin and in the cavity area.

add smoke oil. rub all over chicken unit ingredients are well blended and chicken is evenly coated (by now the salt mixture would be dissolved and there would be sauce, this is the marinade)

put chicken and marinade into a bag and seal tightly then place in fridge. marinate for 8hrs or preferably overnight, turning 2-3times

before baking remove chicken from marinade and let stand out for 15-20mins.pre heat oven during this time at 300°c

place chicken in oven and bake until golden brown, approximately 1 1/2-2hrs. Let stand approximately 5mins before carving. Great with salads, roasted potatoes, pies, vegetables etc.
