Steps
- 1
Preheat oven to 400°F
- 2
Pat chicken dry with paper towel, remove giblets, tuck the chicken wings underneath the breast and tie the legs together with kitchen twine (if you don’t have twine, aluminum foil is just as good. Just roll it up until you can tie the legs together.)
- 3
Combine the melted butter and seasonings into a large bowl then use your hands to rub the mixture all over the chicken including under the skin.
- 4
Stuff garlic cloves, onion, and a few lemon slices inside the chicken cavity
- 5
Place the chicken on a large baking dish and roast in the oven breast side up until the skin is golden brown and a thermometer inserted in the chicken reads 165°F, about 55-60 minutes
- 6
Spoon the juices from the bottom of the baking dish over the chicken and allow the chicken to rest for 15 minutes before carving.
