Ingredients

7 servings
  • chicken prep.
  • 3 lbchicken breast cubed
  • 2 largeeggs beaten
  • 1/2 cupdry bread crumbs
  • 1/4 stickbutter
  • 8 ozcan tomato sauce
  • 1/2 tspdried basil leaves
  • 1/4 tsppaprika
  • 1/2 cupmozzarella chs shredded
  • Cheese Sauce Ingredients
  • 1 tbspbutter
  • 1 tbspflour
  • 1/8 tspsalt
  • 1/2 cupchicken broth
  • 1/2 cuphalf and half
  • 1/2 cupshredded mozzarella cheese
  • 1/8 tspcayenne red pepper

Steps

  1. 1

    preheat oven to 400

  2. 2

    Cut chicken into cubes. Dip chicken into eggs and coat with bread crumbs.

  3. 3

    Heat butter in 12 in skillet. I use virgin olive oil instead

  4. 4

    Cook chicken over medium heat until brown on all sides. Stir in tomato sauce and basil and reduce heat

  5. 5

    Cook and cover over low heat until done about 30 minutes.

  6. 6

    Prepare mozzarella sauce. I like to double sauce.

  7. 7

    Arrange chicken pieces with tomato sauce in ungreased baking pan.

  8. 8

    Spoon mozzerarella sauce over chicken.

  9. 9

    Sprinkle with mozz. chs and paprika.

  10. 10

    Bake in oven on 400°F until chs is melted and bubbly around edges.
