Steps

heat oil in large pan. add onion, garlic, carrots and celery. saute until onion is transparent.

add potatoes, tomatoes, zucchini, green beans, pepper and water. simmer for 30 min.

add white beans and pasta.

in blender, blend basil, 1 clove of garlic, and a cup of soup from pot. return mixture to soup. stir and serve.

makes 2 1/2 quarts
