Slice tofurkey and sautee in 1/2 tablespoon of oil.

Remove sausage and add rest of oil. Add garlic, squash, salt, pepper, stevia, and pepper flakes. Stir together and cook for 1 to 2 minutes.

Add vinegar and cook 1 to 2 minutes more. Chayote should be wilted, but firm and crunchy.

Return sausage to pan just to warm it back up.
