add one egg white to castor sugar. whisk until light and fluffy.

add another egg white. whisk again

add last 2 egg whites. whisk

dollop the meringue into the baking paper, spread over pan with spatula. sides slightly higher than middle

bake for one hour to one and a half hours. it is ready when it is slightly golden on top

use to make pavlova
