Ingredients

8 servings
  1. 1/2 lbsliced bacon
  2. 1/2 cupchopped onion
  3. 1/2 cupchopped green pepper
  4. 12 mediumeggs
  5. 1 cupmilk
  6. 1 packages(16 oz) frozen hash brown potatoes, thawed
  7. 1 cup(4 oz.) shredded cheddar cheese
  8. 1 tspsalt
  9. 1/2 tsppepper
  10. 1/4 tspdill weed

Steps

    Preheat oven to 350°F.

  2. 2

    In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 Tbsp. drippings. Crumble bacon and set aside. In same skillet, saute onion and green pepper in drippings until tender; remove with a slotted spoon.

    In a large bowl, whisk the eggs and milk. Stir in has browns, cheese, salt, pepper, dill, onion mixture and bacon.

    Transfer to a greased 13x9x2 inch baking dish. Bake uncovered for 35-45 minutes or until a knife inserted near the center comes out clean.
