Ingredients

  • 2 can16 oz chickpeas, drained, reserving 1/3 c liquid
  • 1/2 eachcooked sweet potato
  • 1/2 cuptahini
  • 1/2 cupfresh lemon juice
  • 1 tspto 1-1/2 kosher salt
  • 1/2garlic clove
  • 1/4 tspground cumin
  • 6 cupsliced cucumbers

Steps

    Serves 6 (Phase 3)

    Using a food processor or blender, blend all ingredients except cucumbers, until smooth.

  3. 3

    Serve each serving of hummus with 1 cup of sliced cucumbers
