Ingredients

  1. 6chicken thighs (or 3 halved breasts)
  2. 6 slicebacon, cut into lardons
  3. 8Cipolline onios
  4. 1 lbcremini mushrooms
  5. 8fingerling potatoes, scrubbed
  6. 2 clovegarlic, crushed
  7. 1/2 tspdried thyme
  8. 1 cupchicken stock
  9. 1 cupBurgundy wine
  10. 1salt and pepper to taste
  11. 1chopped fresh parsley to garnish

Steps

  1. 1

    Render the Lardons in a large skillet.

  2. 2

    Remove Bacon and brown chicken pieces in the rendered fat.

  3. 3

    Arrange vegetables and garlic on the bottom of a slow cooker.

  4. 4

    Place chicken pieces on top of vegetables and add remaining ingredients except wine.

  5. 5

    Cook on LOW 8 to 10 hours. During last hour of cooking, add wine, Stir, and raise heat to HIGH.
