Ingredients

  1. 2 cupcooked ham (cubed)
  2. 1 cupchorizo sausage (sliced)
  3. 1 cupboneless chicken (cubed)
  4. 1 mediumonion (finely chopped)
  5. 1 mediumsweet bell pepper (finely chopped)
  6. 2 smalljalapeno peppers (chopped, seeded, and de-veined)
  7. 2 clovegarlic (minced)
  8. 1 1/2 cupconverted rice
  9. 28 ozcan diced tomatoes
  10. 2 cupchicken stock
  11. 1 tbspmarjoram
  12. 1 tspbasil
  13. 1 tspsmoked paprika
  14. 1/2 tspred chili flakes (optional)
  15. 1 tspTobasco pepper sauce
  16. 1/2 tspblack pepper

Steps

  1. 1

    Chop meat into cubes and place in separate bowls

  2. 2

    Finely chop onion and peppers and place together in another bowl

  3. 3

    Mince garlic

  4. 4

    Combine chicken stock, marjoram, basil, paprika, pepper, and Tobasco into a 2 cup measuring cup

  5. 5

    In a large pot over medium heat:

  6. 6

    Brown chorizo sausage and remove with a slotted spoon, set aside

  7. 7

    Add chicken and brown, then

  8. 8

    Add onion and green pepper, cook until softened, then

  9. 9

    Add garlic, cook about 1 minute, then

  10. 10

    Add uncooked rice, stir, then

  11. 11

    Add ham and chorizo, stir, then

  12. 12

    Add diced tomatoes, stir, then

  13. 13

    Add chicken stock mixture, stir, then

  14. 14

    Bring to a low boil, then cover and turn down to a simmer

  15. 15

    Simmer cover for about 20 minutes

  16. 16

    After 20 minutes, turn off heat, let stand covered to 5 minutes
