Ingredients

  1. For the dry ingredient bowl:
  2. 1/2 cupoat bran
  3. 1 cupwhole-wheat flour
  4. 1/4 cupground flaxseed
  5. 1 tspbaking soda
  6. 1 1/2 tspbaking powder
  7. 1/2 tspsalt
  8. For the blender:
  9. 1Apple
  10. 1/2 cupYogurt, Plain, Nonfat
  11. 1/2 cupDark Molasses
  12. 1 tspvanilla
  13. 1 dashalmond extract
  14. 1/2 tspnutmeg
  15. 2Egg
  16. For the final Mixing bowl:
  17. 1 ozWalnuts or Pecans
  18. 1/2 cupDried cranberries

Steps

  1. 1

    Preheat oven to 350°F.

  2. 2

    In a large bowl, whisk together bran, flour, flaxseed, baking soda, baking powder and salt.

  3. 3

    Put yogurt, molasses, apple, vanilla, almond extract, and nutmeg in a blender. Blend until liquefied. Add eggs and blend a few more seconds.

  4. 4

    Transfer wet ingredients into a large mixing bowl. Add dry ingredients, nuts, and cranberries and blend until smooth.
    Pour batter into pan. Cook 35-45 min, until done.
