cook the potatoes

mix the eggs and the flour, knead it with your hands and ad water till it is a smooth dough. let the dough rest for half an hour

For the filling cut the herbage into little pices and mix with the curd cheese. Chrush the potatoes and ad them. Season the filling with salt and pepper

Spread some flour on your kitchen desk and roll the dough out till it reaches a thickness of half a cm or thinner. Cut the dough into squares of 5 square centimeters. Form the filling into little balls and place them at one half of each square. Then, press the opposing edges together.

Heat some water in a pot till it boils, ad some salt and a little bit of oil. Cook the noodles for 6 minutes.

Melt some butter in a pan and roast the noodles gently on each side until they are goldenbrown and crispy.

Put the noodles on a plate and sprinkle them with some grated parmesan cheese.
