
Thai Chicken Curry With Rice

put a bit of oil in a pot

add the curry and stir on high

once it bubbles, go to med heat and add 3 cans of coconut milk (moy poy) it'll say 2 1/2 can on the label stir until it all mixes

once mixed, add the onions, potatoes and chicken
stir and bring to a bubble - 5
once bubbling, go to low heat and let it sit for about 10-15 mins
this will serves 3-5 depending on the size of your coconut milk cans - 6
Now, as it bubbles, you can taste the curry. If it tastes a bit off, I like to add 3 table spoons of sugar to give it a bit sweeter taste and a few dashes of fish sauce to counter sweat to a bit of saltiness.
