Preheat oven to 350'.

Smear the mustard all over the roast.

Mix all the seasonings together in a bowl, then pat onto the mustard roast

Sprinkle the salt on the top of the roast.

Put the roast in a shallos roasting pan and cook for 10 minutes per pound for medidum-rare, or add a few minutes per pound for a more well done roast. Once the roast is cooked, turn the oven off and let the roast sit in the oven for 1 hour without opening the oven door.
