Ingredients

  1. 1 boxFrozen Phyllo Cups
  2. 1 boxFrozen Spinich, thawed & well drained
  3. 2 largeMushrooms, finely chopped
  4. 2 cloveGarlic, minced
  5. 1/4Onion, minced
  6. 1boneless, skinless chicken breast, finely diced
  7. 2 tbspSundried tomato in oil, chopped
  8. 1Salt & Pepper to taste

Steps

  1. 1

    In a skillet with about 2 tbsp olive oil, sear diced chicken until browned & cooked through. Add remaining ingredients except phyllo cups (obviously LOL) to skillet & stir until heated through. Remove from heat & set aside.

  2. 2

    Preheat oven to 350. Fill cups with spinich mixture & place each cup in a mini muffin tin. Bake 15 minutes or until cups are browned.

Love cooking, canning, dehydrating, ect. Always in the kitchen. Hmmm...I bet most men would appreciate that. Hate to break it to 'em though...I don't make sandwiches. Too boring.
