Ingredients

  1. 3 tbspolive oil
  2. 2 headthinly sliced onions
  3. 2 clovegarlic
  4. 175 gramsrindless lean bacon, diced
  5. 225 gramssliced mushrooms
  6. 5 candrained anchovy fillets
  7. 6stoned and halved olives
  8. 450 gramsdried linguine
  9. 25 gramsfreshly grated Parmesan cheese
  10. 1salt and pepper

    Heat the oil in a large frying pan

  2. 2

    Add the onions, garlic and bacon and cook over a low heat, stirring occasionally, until the onions are softened.

  3. 3

    Stir the mushrooms, anchovies and the olives, then season to taste with salt, if necessary, and pepper.

  4. 4

    Simmer for 5 minutes

  5. 5

    Meanwhile, bring a large heavy-based saucepan of lightly salted water to boil.

  6. 6

    Add the pasta, return to the boil and cook for 8-10 minutes or until tenderbut still firm to bite.

  7. 7

    Drain the pasta and transfer to a warmed serving dish.

  8. 8

    Spoon the sauce on top, toss lightly and sprinkle with the Parmesan cheese.

  9. 9

    Serve immediately.
