Ingredients

15 servings
  • 1 canEach, pinto beans, black beans, black eyes peas and white corn
  • 1Each, green pepper and red pepper
  • 1 cupDiced red onion
  • 4Stalks celery
  • sauce
  • 1/2 cupEach- olive oil and white vinegar
  • 1/2 cupSugar
  • 1 tspEach- salt/peppr
  • 2 smallCans, sliced black olives

Steps

  1. 1

    Mix sauce ingredients and boil in small saucepan until sugar dissolves. Remove from hear and cool.

  2. 2

    Drain all canned beans, black olives and corn, rinse under cold water and place in large bowl.

  3. 3

    Dice peppers, celery and onion, mix into beans and corn.

  4. 4

    Pour sauce over veggie and bean mixture refrigerating until cold. Serve with tortilla chips.
