Ingredients

4 servings

4 tbspcoconut oil
1/4 cupSweet onions
1 tspsalt
1 cuprice
1/4 cupcrushed pineapple
1 tbsprice cinnamon
3 tbspshredded coconut
2 1/2 cupwater

Melt coconut oil in pan on medium high heat

Add onions, salt and rice to oil, stir and saute
3

When onions are transluscent add pineapple, cinnamon and coconut
4

When rice is toasted cover with water, add more as necessary to cover. reduce to medium low heat
5

Simmer and reduce until rice is dry and fluffy roughly 20 minutes
