We were about to bake pizza and garlic bread. And needed something to munch in the meanwhile. So took a pack to jalapeño flavored nachos and made this quick munch

preheat oven to 160°F for 5-10 mins

fine chop tomato, onion, bell pepper and mix with oregano, salt and chilli flakes in a bowl

may down nachos and place spoon-fulls of the veggie mixture and dress it up with grated mozzarella

once the tray is set, bake for 5 mins at 180°F and serve!
