Ingredients

8 servings
  • 1(9 inch) pie shell, baked
  • 1 cupConfectioners sugar
  • 1/2 cupPeanut butter
  • 2 cupMilk
  • 2/3 cupWhite sugar
  • 1/4 tspSalt
  • 1/2 tspVanilla extract
  • 4 tbspCornstarch
  • 3Eggs, separated
  • 1/2 tspCream of tartar
  • 6 tbspWhite sugar

Steps

  1. 1

    Preheat oven to 325°F (165 degrees C). Mix confectioners' sugar and peanut butter until mixture has a crumbly texture. Sprinkle half over bottom of pie shell.

    In a pot combine milk, 2/3 cup white sugar, salt, vanilla, cornstarch, and ehh yolks. Cook over medium low heat until thick, pour filling into crust.

  3. 3

    Beat egg whites until foamy. Add cream of tartar and continue beating. Gradually add 6 tablespoons of sugar and continue beating until stuff peaks form. Spread over the top of the pie. Sprinkle with remaining peanut butter mixture.

    Bake for 30 minutes
