Ingredients

8 servings
  • 1Unbanked pie crust
  • 2 tbspOlive oil
  • 1 smallOnion
  • 1 lbFresh spinach, washed & drained
  • 2 largeEggs, beaten
  • 1 cupHalf & Half
  • 1 tspGrated lemon zest
  • 1 tspChopped fresh thyme leaves
  • 6 ozFeta cheese
  • 8 ozGrated Swiss cheese
  • 6 cloveGarlic, minced

Steps

  1. 1

    Preheat oven to 375

  2. 2

    Add garlic and onion to oil and sauté until translucent, 5-7 minutes

  3. 3

    Add the spinach, cook until wilted and season with salt and pepper

  4. 4

    Whisk together eggs, half & half, then add lemon zest and thyme

  5. 5

    Add spinach, feta cheese, Swiss cheese and mix till combined then season with salt & pepper

  6. 6

    Pour the mixture carefully into the crust and sprinkle with remaining half of Swiss cheese
