2 cupAlmond Flour
3 eachEggs
2/3 cupDates
2/3 cupDried Apricots
2/3 cupCalifornian Sultanas
1/2 cupWhisky
1 cupDark Muscovado
1/3 cupCoconut oil
1 tspbaking soda
2 tspLemon zest

Chop dried fruit finely

Soak dried fruit in whisky for at least four hours

Preheat oven to 325°F c

Line and grease 23cm cake tin

Beat eggs with sugar
6

Beat in melted coconut oil and baking soda
7

Fold in almond meal, fruit, and lemon zest
8

Bake 40-45 mins or until skewer comes out clean
