Ingredients

  • 2 lbHalibut or firm fleshed white fish
  • 1 mediumOnion, chopped
  • 1 cupCelery, chopped
  • 3 tbspButter
  • 3/4 cupUncooked rice
  • 2 1/2 cupBoiling water
  • 2 can16 oz. whole peeled tomatoes
  • 1 packages10 oz. Frozen mixed vegetables
  • 1/2 lbShrimp, peeled and deveined
  • 1 1/2 tspSalt
  • 1/2 tspChili powder
  • 1/4 tspDried thyme
  • 1 dashPepper

Steps

  1. 1

    Cut the fish into 1 inch chunks and refrigerate until ready to use.

  2. 2

    In a large stew pot cook onion and celery in the butter over medium heat, stirring till tender.

  3. 3

    Add rice, boiling water, salt, chili powder, thyme, and pepper.

  4. 4

    Cover and simmer for 15 minutes. Stir in fish, tomatoes, vegetables, and shrimp.

  5. 5

    Cover and cook for 10 minutes or until the fish flakes with a fork.
