Ingredients

  1. 4carrots
  2. 4parsnips
  3. 1large sweet potato
  4. 3potatoes
  5. 3 tbspolive oil
  6. 1/2 tspsalt
  7. 1/4 tspblack pepper
  8. Fresh or dried herbs (parsley,rosemary or thyme)

Cooking Instructions

20 - 30 min

    Preheat oven 425°F

  2. 2

    Cut veggies into similarly sized pieces

  3. 3

    Place veggie onto single layer baking sheet

  4. 4

    Drizzle with oil

  5. 5

    Toss well to coat pieces

  6. 6

    Add salt and pepper and herbs

  7. 7

    Roast 25 to 30 minutes until all veggies are tender
