In a bowl add warm milk, sugar and yeast. Mix well. Cover and keep aside for 10 minutes till froth appears.

Now Take a deep bowl. Add the flour, salt, honey and yeast mixture and make a soft dough using lukewarm water if required.

Knead the dough for 5 minutes. Oil a bowl, roll the dough tucking it into a ball and place in oiled bowl. Cover and let rest for 1 hour or more.

Meanwhile prepare the filling. Boil the peas and keep aside.

Take a sauce pan, add ghee, add fennel seeds and saute.

Now add the green peas, crumbled cottage cheese and spice powders alongwith some salt. Saute and mash roughly with a masher.

Lastly squeeze in the lemon juice and add coriander. Mix and keep aside to cool.

Preheat oven to 180 °

Take the proved dough and punch lightly 2 to 3 times. Divide into 4 or 5 equal sized balls. Now dust some flour on a flat surface, flatten a ball of dough with palm and add 2 to 3 tbsps of the filling.

Pinch all sides and bring together. Seal and keep the seam side down on a well greased baking tray.

Make all such stuffed buns. Brush some milk and sprinkle some shahi jeera on it and rest for another 15 minutes.

Now bake for 15 minutes and increase the temperature to 220 ° and broil for 2 to 3 minutes.

Brush butter all over as soon as the buns are taken out.
