Ingredients

2 servings
  1. 1 cupAll purpose flour / maida
  2. 2 tbspClarified butter / ghee
  3. 1 pinchCarom seeds
  4. 1 pinchOnion seeds
  5. to tasteSalt
  6. Oil for frying
  7. For stuffing
  8. 4Boiled potatoes big size
  9. 1/4 bowlGreen peas / matar
  10. 4-5Chopped cashew nuts
  11. 1 tbspRaisins
  12. 1/4 tspChopped green chilli
  13. 1/2 tspRed chilli powder
  14. 1 tspCoriander powder
  15. 1/4 tspTurmeric powder
  16. 1 tspGinger garlic paste
  17. 1/2 tspRoasted cumin seeds powder
  18. to tasteSalt
  19. 1 pinchCumin seeds
  20. 1 tbspChopped coriander leaves

Steps

  1. 1

    Take all purpose flour/maida,clarified butter,carom seeds,onion seeds and salt an the mix well.

    Make a crumb like texture.

    Knead a soft dough and keep aside for 30 mins.

    Boil potatoes and peel and crush them.

  5. 5

    Heat 2 tbsp oil in a pan.

  6. 6

    Add cumin seeds to crackle.

  7. 7

    Add matar/green peas and cover the pan and cook for 3 - 4 mins in a low flame.

    Then add ginger garlic paste,green chilli,coriander powder,red chilli powder and turmeric powder and mix well.

    Add boiled and crushed potatoes,salt and roasted cumin seeds powder and saute for one mins

    Dont mash the potato completely just crumble it with hand.

    Add cashew nuts and raisins and mix well.

    Add coriander leaves and mix well.

    Now stuffing is ready.

    Let it cool.

    Now roll a small dough just like chapati.

    Cut it in two halves.

    Apply water to half of cut shape it cones press it.

    Stuff the potato filling.

    Seal the edges of samosa.

    Heat enough oil in a pan.

    Place the samosa,lower the heat and fry till light brown

    Serve hot samosa with tea.
