Nokey's Salmon Patties with Lemon Caper Sauce

I had this can of salmon forever and was dreading cooking it. To my surprise, it was beyond excellent! My picky 7 year old got upset that there was no extras!!! If you knew the struggles I have with him, you would super surprised. This "poor man meal" tasted like it came from a rich man's menu according to my husband. I served it with Middle East olive oil and garlic couscous with homemade hummus over the couscous. Can't wait to see if y'all like it!

Ingredients

4 servings
  1. 1red salmon- flaked with bones & skin discarded
  2. 3Stalks Green onion chopped small
  3. 1 packagesButtery round crackers, i.e. Ritz, crushed (approx 1 cup)
  4. 2 1/2 tbspLemon juice
  5. 1Egg, beaten
  6. 1 tspSoy sauce
  7. 1 tbspOr more lemon pepper
  8. 1as needed Black pepper & salt ( 1/8 tsp or to taste)
  9. 1/2 cupSour cream ( it was not as good with Greek yogurt, but was ok)
  10. 1 tbspCapers, rinsed, drained & rough chop (RINSING is most important!)
  11. 1 tbspLemon juice
  12. 1 tbspLemon pepper
  13. 1Salt & pepper
  14. 1 tbspOil ( I use a canola/ olive oil blend)

    Mix first 8 ingredients

  2. 2

    Shape into 4 patties or eight small patties. For best results chill in freezer for 20-30 minutes or fridge for 1 hour.

    Mix next 5 ingredients (not oil) and allow to sit/chill at least 5 minutes before adjusting to taste as it takes a few minutes for flavors to blend well.

    Heat oil in skillet. I like my good non-stick pan. You want it nice and hot, med-high.

    Add salmon patties and cook 3-4 min per side.

  6. 6

    Serve with sauce over top and enjoy!

    Sauce is also great over couscous! I always make the garlic and olive oil couscous and add in 1 tsp lemon juice and 1 tsp dried rosemary before fluffing the couscous. Perfect side for the salmon. Enjoy!
