you need a really big pot(like a large Dutch oven). Brown the roast then cube it( About thumb size should do it), set aside.

dice onion and saute in pot, when that's done add cubed roast and broth, then simmer for 1 hour.

while that cooks cube hard Vegi's
- 4
after 1 hour add in the hard vegi's and cook another hour
- 5
check vegi's for softness and add water as needed if the broth gets low
