Ingredients

  • 6 cuprhubarb cut into 1" pieces
  • 2eggs
  • 1 3/4 cupWhite sugar
  • 4 tbspflour
  • 1 pinchsalt
  • 2 tspvanilla

Steps

  1. 1

    Pour boiling water over cut rhubarb and let sit for 2 minutes.

  2. 2

    Drain rhubarb.

  3. 3

    Beat eggs.

  4. 4

    Combine flour, sugar and salt.

  5. 5

    Add to beaten eggs.

  6. 6

    Add vanillla.

  7. 7

    Fold into rhubarb.

  8. 8

    Make double pie crust.

  9. 9

    Roll out and place bottom crust.

  10. 10

    Add filling.

  11. 11

    Roll out and place top crust.

  12. 12

    Bake at 400° for 45 minutes.
