Ingredients

30 mins
  1. In a food processor puree one bag spinach leaves, 1/2C unsalted roasted pistachios, 1/2C salted roasted pistachios, 1/4C walnut oil, 1/4C almond oil, 1/4C grapeseed oil & 1tbsp lemon juice. Add salt to taste & oil to desired consistency.
  2. 2 tbspUnsalted butter
  3. 6Boneless skinless chicken thighs
  4. 2 tspGarlic powder
  5. 1 tspSea salt
  6. 3/4 cupHeavy cream
  7. 1Meyer lemon
  8. Topping
  9. 1/4 cupPine nuts

Steps

30 mins
  1. 1

    Melt butter in nonstick skillet over medium / medium low heat

  2. 2

    Season chicken with sea salt & garlic powder

  3. 3

    Cook in melted butter over medium low heat approx. 4-5 minutes on each side

  4. 4

    Squeeze juice from half meyer lemon over chicken, reduce heat slighty & cover for 5 minutes

  5. 5

    Uncover & remove chicken from pan after checking for doneness (cook covered 2-3 additional minutes if not cooked through)

  6. 6

    After removing chicken from pan, add heavy cream to pan and squeeze juice from 2nd half of meyer lemon

  7. 7

    Mix cream & lemon juice thoroughly until slightly thickened, add more butter, lemon juice to taste

  8. 8

    Plate chicken & pour lemon cream sauce over chicken & top with pesto and pine nuts

  9. 9

    Suggestion: serve with lemon green beans
