Creamy lemon chicken with spinach pistachio pesto & toasted pine nuts

Melt butter in nonstick skillet over medium / medium low heat

Season chicken with sea salt & garlic powder

Cook in melted butter over medium low heat approx. 4-5 minutes on each side

Squeeze juice from half meyer lemon over chicken, reduce heat slighty & cover for 5 minutes

Uncover & remove chicken from pan after checking for doneness (cook covered 2-3 additional minutes if not cooked through)

After removing chicken from pan, add heavy cream to pan and squeeze juice from 2nd half of meyer lemon

Mix cream & lemon juice thoroughly until slightly thickened, add more butter, lemon juice to taste

Plate chicken & pour lemon cream sauce over chicken & top with pesto and pine nuts

Suggestion: serve with lemon green beans
