Ingredients

3 cupCarrots, grated
2 cupSugar
1 cupOil
4Eggs
3 tspCinnamon
1 tspAllspice
2 tspBaking Soda
1 tspSalt
2 tspVanilla
2 cupFlour
Icing
4 ozCream Cheese
1/4 cupButter
2 cupIcing Sugar
1/2 tspVanilla
1 tbspwater

Steps

For the cake: Mix everything but the carrots together and stir until well incorporated. Add the carrots and mix well. Pour into a greased pan.

Bake at 350' for 55 minutes.

For the icing: Cream all but water together. If needed add the water to make a little runnier. Spread over cake.
