Ingredients

  • 4 clovegarlic, finely minced
  • 1 tspdried leaf oregano
  • 1/2 tspsalt
  • 1 tspchili powder
  • 1/4 tspground cumin
  • 1 dashblack pepper
  • 2 tbspolive oil
  • 1/2 cupchicken broth
  • 4chicken leg quarters

    Preheat oven to 425°F.

  2. 2

    Combine garlic, oregano, salt, chili powder, cumin, and black pepper.

  3. 3

    Add olive oil and mix well.

  4. 4

    Use a mortar and pestle to make a paste consistency.

  5. 5

    Wash chicken leg quarters and pat dry.

  6. 6

    Snip off any excess skin.

  7. 7

    Arrange the chicken pieces in a baking dish and pat the garlic mixture over each quarter.

  8. 8

    Pour 1/2 cup chicken broth (part dry white wine, if desired) into baking dish.

  9. 9

    Bake for 40-50 minutes, or until juices run clear.
