Green peas are abundantly available in Winters. They are a very good sauce of proteins.They provide good roughage. They are very versatile , can blend with any vegetable. I have made koftas with a difference. Generally people make koftas of potatoes and stuff peas and other vegetables in the centre. I have reversed it by making covering of peas and stuffing of potatoes and other vegetables.

Boil peas and keep aside. Boil potatoes, carrots and capsicums separately.

Mash peas and 3 slices of bread in the blender. Add salt, lemon juice and chaat masala and smoothen it out.

Mix together boiled potatoes, carrots and capsicums. Add garam masala, ginger garlic chilli paste, salt and lemon juice... Make balls.

Take a small ball of peas mixture. Flatten it in your palm. Add some stuffing of potatoes mixture. Boverton it either peas mixture. Make balls and roll it in the remaining bread crumbs.

Deep fry these peas koftas in hot ghee.

Remove hot koftas and either serve it with some sauce or put it in the gravy and serve.

You can serve them as a starter.

Make gravy by dry roasting all the spices including cashews.Grind them coarsely.

In the same pan dry roast tomatoes. Add garlic and all other spices. Add the ground powder and cook for a few minutes more.

Grind the tomatoes paste. Cook for 5 more minutes and add salt and 1 cup milk.

Just before serving place koftas in a dish and pour hot gravy over them. Serve with roti or rice.
